Gelling agent

     Gelatin is a protein obtained by the partial hydrolysis of collagen derived from selected pig or beef skin, white connective tissue, and bones of animals from approved abattoirs and meatworks inspected by Agricultural authorities.

     The products is nearly tasteless and odorless. It is vitreous,brittle solid, faintly yellow in colour and free of added flavours, preservatives and chemical additives.  Gelatin derived from an acid-treated precusor is known as Type A; and gelatin derived from an alkali-treated precusor is known as Type B.

     Commercially, gelatins are available with Bloom strengths from 50-300 Bloom.

Gluten

     A water insoluble complex protein fraction separated from wheat flour.  When fully hydrated, wheat gluten forms a viscoelastic mass with strong film. It absorbs about twice its own weight of water. Protein content is about 75 % min.

     It is a low DE powdered maltodextrin prepared by the controlled hydrolysis of wheat starch

     It is a white powder and bland in flavour , with negligible sweetness.  PHS-17 is clear in solution. The powder is low hygroscopic character.

Use :    Dry blended food products as a bulking agent and carrier.  Increases the keeping quality of cakes via increased moisture retention
